We appreciate all the wonderful people that supported our school by working at the Oktoberfest booth and selling cake for four great days!  Now that the Oktoberfest is over, it’s time to do some baking!

Mt. Angel Oktoberfest Apple Cake (by Diane Lee)


1/2 cup oil

2 beaten eggs

 2 tsp. vanilla

4 cups apples, cored and chopped

1 cup raisins

2 cups sugar

2 tsp. soda

2 cups flour

1/2 tsp. salt

1 tsp. cinnamon

Butter Sauce:

1/2 cup packed brown sugar

1/2 cup white sugar

1/2 cup butter

1/2 cup whipping cream

1/2 tsp. vanilla

Cake:  Mix together eggs, vanilla, and oil.  Add apples and raisins.  Stir in dry ingredients.  Pour into greased 9 x 13 inch pan and bake at 350 degrees for one hour.

Butter Sauce:  In a small pan, combine sugars, butter, and whipping cream.  Bring to a boil and add vanilla.  Pour warm sauce over individual servings of apple cake.
